It’s 1 am and I am making spicy chocolate gingerbread cookies

Wow this is a lot of ingredients!
My mixer is broke so now I will be mixing the old fashioned way, by hand.
You start off with two cups of all-purpose flour, 2 teaspoons of ground ginger, 2 tablespoons of fresh grated ginger (use a rasp to grate ginger) 1 teaspoon of ground cloves, 1 teaspoon of nutmeg, 1 teaspoon of cinnamon, 2 teaspoons of ground all spice, 1/2 cup unsulfured molasses, 1/4 cup of dark corn syrup, 1/4 cup of agave nector, 1/4 cup of liquid sugar in the raw, 3 tablespoons of unsweetened Dutch-process cocoa powder, one stick of butter, half of a cup of dark brown sugar,
1/2 cup unsulfured molasses, 1 teaspoon of baking soda, half of a package of semi-sweet chocolate chips, 1 hersey’s milk chocolate bar. (or any of your favorite chocolate)
Preheat oven to 325
Mix all dry ingredients.

In another bowl mix butter and ground fresh ginger and brown sugar and all other wet ingredients.

Disolve baking soda in a teaspoon of hot water and mix in bowl with butter and other wet ingredients.
Add in your chocolate and chocolate chips.
Pour half of your dry ingredients and mix well, add the rest of the flour and mix mix mix.
Dump the dough on a big piece of plastic wrap roll up and put in fridge for an hour.

After an hour or so take dough ouf of fridge and line your baking sheets with parchment paper.
Roll dough into 1 inch balls and place on parchment paper 2 inches apart.
You can roll the balls in sugar or leave the balls plain, I do both.
put into oven for 12 minutes.

Take the parchment paper off of the cookie sheet and put it on the kitchen counter to cool for 2 minutes.
Then take cookies off of parchment paper and put on wire wrack to cool.
You can also add some powered sugar on top to make snow cookies, I leave half plain and the rest snow cookies.
This makes 90 medium cookies.
These cookies are guaranteed to warm you up on a cold winter night and good for a snack at 230 am like now! lol

Tonight it’s duck breast with sweet wine sauce and sushi rice and broccolini!

It is the perfect night for some duck breast with a sweet wine sauce.
Take the duck breast out of package and dry with a paper towel, skin side up on a cutting board and take a very sharp knife and score the skin in a crisscross pattern but not cutting into the flesh of the duck.
Lightly season with sea salt and coarse black pepper on both sides.

Now it is time to prepare the sweet wine sauce.
Pour one cup of any red wine of your liking and one teaspoon of agave nectar and one teaspoon of liquid sugar in the raw.
Put on Medium heat and stir occasionally until thickened, put that on the side.121412 010  121412 018
Start your flame on low and put the duck skin side down in a cast iron dry pan.

Put the water up for the sushi rice, it is usually two cups of water for one cup of rice.
And watch it as you can see by my pics that it can boil over if you are not paying attention.
What a mess!

Turn the duck breast when the duck fat has melted out into the pan and it is turning brown.
Cook it another 10 minutes flesh side down, cooking time depends on your preference for medium or well done.
You cannot get salmonella from duck like you can with chicken, so eating it rare is a good thing.
Take the duck breast out and put on a cutting board let it rest for five minutes.

Now it is time to wash the brocchlini and put into a steam bag and put in microwave for 4 minutes and it’s done.
Pour some extra virgin olive oil over the broccolini with some sea salt.
Slice the duck breast as thick or thin as you like plate and add the wine sauce over it.
I also put the wine sauce over the rice, It’s amazing, yum yum yum!

Banana pancakes from scratch, oh boy!

This morning/afternoon it is banana pancakes which I eat a lot of during the fall and winter.
I start out with a cup and half of whole grain flour a pinch of salt 3 teaspoons of baking powder, 1 egg, one cup and 1/4 of whole milk, one teaspoon of agave nectar and one teaspoon of sugar in the raw (liquid).|

Mix well until smooth, cut your banana into slices and add it to the mix and in the meantime grease your griddle with butter on a paper towel and wait for it to get hot but not too hot or the pancakes will burn and I’ve had plenty of those..lol

flip the pancakes when they are light brown and flip em on your plate add butter and syrup and you are good to go.
preparation time 10 minutes, cooking time 5 minutes depends on your griddle.

Oh boy what a plate of flapjacks, griddle cakes or just good o’le pancakes!
Now it’s time to take a nap cause these griddle cakes have worn me out..lol

12/12/12 Barbecue chicken and herb roasted potatoes for dinner

Tonight was a pretty easy dinner,barbecue chicken and herb roasted potatoes.
I cut a whole chicken in half, which is not for the squeamish but you get used to it after like 50 chickens..lol
You cut out the back bone with your chicken scissor and you save it and freeze it for chicken soup.
My niece could not and would not clean a chicken and she would bring it to my moms house for her to cut and clean.
I can’t figure out how she would cook it for her family when she got home without touching it..lol
Ok back to my story, I heated a cast iron pan with about five tablespoons of olive oil and layed the two pieces of chicken skin down for ten minutes.
Then turn it over for another five minutes, in the meantime have your oven preheated at 550.
Put your two pieces of chicken in an oven safe pan and pour your barbecue sauce on top of them until they are completely covered, put in oven and set your oven timer for 45 minutes.
Turn down oven to 400 after 10 minutes.

Now it is time to cut the potatoes and coat them with olive oil and herbs and get them into the oven 15 minutes after the chicken.
So cut the potatoes up in small cubes (I like yukon gold for this receipe) place potatoes in baking pan with olive oil.
I have been using 365 olive oil from Whole foods, it’s tasty and cheap.
I think I use at least 4 bottles of olive oil a month which can be very expensive, so if you find one that is modest in price and maximum on taste then go for it.
You can use whatever spices turn you on but I use oregano, black pepper, and something sweet and tangy with some crushed pepper or a pepper blend.
Mix well pop in oven for 30 to 35 minutes until crispy.

Take the chicken out of the oven with the potatoes and voila, dinner is served.
Total time 1 hour, clean up time, pls don’t ask..lol
